Christmas Morning Cookies
Every Christmas Eve, we leave a plate of fresh-baked cookies out for Santa. By morning, only crumbs remain and there's always a scribbled note of thanks. Last year, Indiana asked if we could start a 'Christmas Cookie of the Year' tradition. So we did — and it's become our family's favorite holiday ritual.

The Vanilla Bean Secret
We switched from vanilla extract to real vanilla bean paste last spring, and it changed everything. The tiny black specks, the floral aroma, the way it rounds out the sweetness... It costs a little more, but some ingredients are worth it.

Amélie's Peanut Butter Dream
Amélie spent three weeks perfecting her signature peanut butter cookie. The first batch was too crumbly. The second, too flat. By batch number four, she had it — a soft, melt-in-your-mouth center with a delicate crisscross pattern on top. 'It needs a tiny bit of sea salt,' she declared. She was right.

The Great Chocolate Chip Debate
Did you know? The original chocolate chip cookie was invented by accident in 1938 when Ruth Wakefield ran out of baker's chocolate and chopped up a semi-sweet Nestlé bar instead. Amélie insists semi-sweet is the only 'real' choice. Indiana votes milk chocolate every time. The debate continues daily in our kitchen.

Why We Chill Our Dough
Patience is the secret ingredient. We chill every batch of dough for at least 24 hours before baking. It sounds fussy, but it lets the flour fully hydrate and the flavors deepen. The result? A cookie with crisp edges, a chewy center, and a richness you just can't rush.

The Summer It All Started
In the summer of 2026, the kids asked to sell cookies on summer break. We set up a little table at the end of our driveway, and the response was overwhelming — neighbors came back for seconds, thirds, and fourths. Lyons Cub Cookies was born that summer, born to raise money for camp. What started as a driveway stand became something none of us expected.
